Bourbon Meatballs
Pleases a crowd of hungry, party goers. Great as a dish to pass.
INGREDIENTS
Meatballs
·3/4 lb. ground beef
·3/4 lb. ground pork
·1/2 cup plain bread crumbs
·1/2 cup finely chopped onion
·1/2 t. salt
·lots of cracked pepper
·1 chicken egg
·oil for browning in pan
Bourbon Sauce
·1 jar apricot preserves (1cup)
·1/4 cup brown sugar
·3 T. hot chili sauce
·1/2 cup barbecue sauce
·1/4 cup bourbon (Hennessy)
·1/4 cup water
DIRECTIONS
Preheat oven 350ºF
Line baking sheet with parchment paper set aside
Put meatball ingredients (except the oil) in large mixing bowl, break up meat as you put it in. Mix together, using finger tips so not to compact the meat. Form 1” balls.
Heat oil in skillet, brown meatballs, work in batches. Transfer to baking sheet, bake for about 10 minutes, until cooked through. (thermometer, should read 160°F)
Put meatballs in sauce, let heat until ready to serve. Can be kept in a slow cooker on warm for serving.
To make sauce, combine all the sauce ingredients in a skillet, bring to simmer. Simmer gently for about 10 minutes until thick.
