Cornbread Casserole
This casserole is easy and versatile.
INGREDIENTS
· 1 lb. ground beef
· 1 small onion, chopped
· 1/3 cup salsa (spice heat of your choice)
· 1/2 tsp. garlic powder
· 1/2 tsp. each salt and pepper
· 12 oz. of cornbread mix. (store bought or homemade)
· egg and milk to make cornbread mixture
· 8 oz. cheddar cheese, grated.
DIRECTIONS
Preheat oven 400ºF
Place a 9x13 pan with a pad of butter or tallow in the oven well warming up to melt and spread on the bottom of pan for non-stick purpose.
Brown ground beef and onion in a medium cast iron pan.
Add salsa and seasonings.
Mix cornbread in large bowl (homemade or store bought box) use the amount of eggs and milk to make the cornbread batter, or follow the recipe on the box.
Pull out 9x13 pan and pour the cornbread batter evenly over the bottom of the pan.
Place the meat mixture evenly over the cornbread.
Sprinkle the cheddar cheese over the top of the meat mixture.
Bake uncovered for 20 minutes or until the cornbread is done and the top is lightly browned.
Serve & Enjoy!
Note: Switch out the Mexican meat mixture for a Chili meat mixture to change up the flavor profile on this casserole. We serve it with a side salad. It’s an easy well rounded meal for a weekday dinner.
