Tongue Tacos
This is simple way to make tongue that is tasty and easy to make for a weeknight meal. If you own a slow cooker you can make this. Put it in the morning, when you get home from work peel, chop, fry and serve in about 15 mins.
INGREDIENTS
1 Woodbridge beef tongue
1/2 onion
2 cloves garlic, or more to taste
1 bay leaf
salt and ground black pepper to taste
1 tbsp butter
To serve: shells or wraps, lettuce, cheese, salsa or whatever fixings you like on your tacos
DIRECTIONS
Put beef tongue, onions, garlic and bay leaf in slow cooker; season generously with salt and pour water over to cover beef tongue.
Put lid on and cook on low for 8 hours.
Move beef tongue to cutting board and let cool slightly. Peel outer layer of skin from beef tongue and remove the rough end. (I keep the beef stock for noodle soup the next day.)
Chop or shredded meat into bit size pieces.
Heat butter in a cast iron or skillet over medium heat: cook and stir chopped meat until tender with little crispy edges, 5 to 10 minutes. Season with salt and pepper
Serve on shells or wraps with all your favorite taco toppings.
