Autumn Chowder

Ingredients

  • 1 lb. Woodbridge Bacon

  • 1 cup carrot, sliced

  • 1/2 cup celery, chopped

  • 4 Tbs. onion, chopped

  • 4 cup mashed potatoes (make ahead)

  • 2 cans cream corn (or homemade)

  • 1 cup peas

  • 4 cup whole milk (Woodbridge fresh unprocessed whole milk)

  • 1 Tbs. salt

  • 2 cup cheese, shredded (I used sharp cheddar)

Directions

  1. Make mashed potatoes, ahead.

  2. Fry Woodbridge bacon, set aside to cool.

  3. Saute ́ carrots, celery, onion, in the bacon grease. Yes, in the grease, that gives the chowder the depth in flavor. Now drain the grease.

  4. In a stock pot, put mashed potatoes, corn, peas, carrots, celery, onion, milk, and salt. Heat on medium.

  5. Stir in cheese once warmed.

  6. Serve warm, with diced tomatoes and bacon as topping.
