Autumn Chowder
Ingredients
1 lb. Woodbridge Bacon
1 cup carrot, sliced
1/2 cup celery, chopped
4 Tbs. onion, chopped
4 cup mashed potatoes (make ahead)
2 cans cream corn (or homemade)
1 cup peas
4 cup whole milk (Woodbridge fresh unprocessed whole milk)
1 Tbs. salt
2 cup cheese, shredded (I used sharp cheddar)
Directions
Make mashed potatoes, ahead.
Fry Woodbridge bacon, set aside to cool.
Saute ́ carrots, celery, onion, in the bacon grease. Yes, in the grease, that gives the chowder the depth in flavor. Now drain the grease.
In a stock pot, put mashed potatoes, corn, peas, carrots, celery, onion, milk, and salt. Heat on medium.
Stir in cheese once warmed.
Serve warm, with diced tomatoes and bacon as topping.
